Korean Jajangmyeon - Noodles with black bean sauce

  • 3 tbsp of roasted Black Bean paste

  • 1 cup of cooking Oil

  • 2 tsp of Sugar

  • 1 tsp of Potato or Corn starch

  • 1 Onion

  • 2 servings fresh Jajangmyeon or udon noodles

  • 2 Pork shoulder steaks

  • 3-4 medium Potatoes

  • 1/2 Zucchini

  • 1 cup of Water

Step 1

Boil the water for the noodles.

Step 2

Meanwhile, chop your 2 pork shoulder steaks in medium cubes of 2cm. Cut your half zucchini and 4 potatoes in small cubes of 1cm. Slice your onion.

Step 3

Heat your frying pan at medium heat, add the black bean paste (3 tbsp) and the oil (1 cbsp). Once the oil starts to bubble, let the paste fry for 1 minute while stirring constantly. Your paste should get a granular consistency. Once done, take the paste out from the oil and let it rest in a small bowl.

Step 4

In another large pan, heat some oil (1 tbsp) at medium high temperature. Add the pork and stir fry for 5 min until the pork loses its pink color.

Step 5

Add the onion over pork. Cook for 3 minutes and stir from time to time until they get soft.

Step 6

Now put the zucchini and potatoes and continue to cook for another 7-8 min.

Step 7

Spread the black bean paste over your meat and vegetables with 2 tbsp of sugar. Mix well to spread the paste on all the food.

Step 8

Right after, pour the cup of water and once the water comes to a boil, let the dish cook for 7 minutes at medium low heat.

Step 9

While it's simering, gradually add the starch (1 tsp) until your sauce has thickened. Turn off the heat, cover the pan and leave it to rest.

Step 10

Time to cook your noodles ! Prepare them al dente so be sure to follow the recommandations on the packaging. Drain your noodles.

Your dish is now ready, just serve yourself and enjoy the umami taste of your meal !
